April showers, bring May flowers. I am sure we are all greatful for the rain we are receiving, just as long as it stops. I hope this month brings an abundance of joy to you all. I am very excited to bring to you the featured wine of the month.

Starfish Wishes

Starfish Wishes-American Chardonnay

Rich and fruity with hints of citrus on the nose and tropical flavors. Fresh, well-balanced wine lingers to a long, crisp finish. Pairs well with sharp flavors like olives and sharp cheeses, corn products, meaty fish and shell fish. Dry wine.

For all the Chardonnay lover's out there, this is a must to have in stock. A good Chardonnay always ends in a smile. Chardonnay is such a popular white-wine grape that it is nearly synonymous with white wine. Chardonnay is so ubiquitous, it can be easy to take it for granted. Chardonnay white-wine grape's are aslo one of the most widely planted. Describing the flavors of a Chardonnay is not an easy task, but you will know by your first sip of Starfish Wishes this Chardonnay has all the checkmarks needed to have such a blend that makes it unforgettable. Again, this to me being the most popular wines does not get as much spotlight that is needs. Lets talk about tasting wine. When doing so please take your time by and enjoy the moment. Here are some tips to enlighten you're experience.

Lets learn how to taste wine and develop your palate!

I have been to many wine tastings, the most unfortunate thing to see is people rushing through their tastings. If you come to a tasting thinking you just want to guzzle a bottle of wine, then just buy a bottle and be done. But for those of us who do want to learn more about the process of each wine and take in the moment of each sip here are some tasting steps. You will see in these steps I have added one that I just recently learned that I'm excited to share.

STEP 1: LOOK - (Make sure your wine glass is clear)- Hold your glass of a white surface or a clear surface in the natural light. Now look at the wine carefully, this will help you identify its clarity, colour and intensity. PLEASE, enjoy the visual. There is a reason for this step!

STEP 2: SMELL- This is such an important step. To truly appreciate a wine, it's important that you try to identify it's delicate aromas and their intensity. This is very useful in understand the wine's quality. It's quite smililar to sniffing perfumes.

STEP 3: SWIRL- Swirling the wine gently releases intricate and complex wine aromas in the glass, this too will help you identify the legs of the wine. The prominence of legs in a glass generally indicates higher alcohol content, and thus a richer texture and fuller body. Oh, and this makes you look fancy!!!

STEP 4: SMELL AGAIN- Yes, smell again. Now that you have released the aromas from your swirl delicately breathe in the wine aromas that have been further amplified. Now for the best part!

STEP 5: SIP- HOLD ON. Do NOT just swallow. This is the step I was telling you about earlier that I learned. Take a small sip and let it sit under your tongue and gently breathe in, this step here floored me as my senses went off like fireworks. NOW sip, sip away!

Before I go, I would like to share with you all a recipe. This week I went to local seafood restaurant and ordered flounder with a charddonay cream sauce. It was so delightful I had to find the recipe for the sauce. This sauce can be paired all types of seafood and meat dishes. You will not be disappointed.


  • 1 tablespoon butter, unsalted

  • 3/4 cup shallots, minced

  • 1 3/4 cup chardonnay, dry

  • 3/4 cup heavy cream

  • 1 teaspoon salt

  • 1 teaspoon fresh cracked black pepper

Yield Serves: 1 -1 cups Preparation In a small sauce pan, over medium high heat, add the butter and when foamy, add the shallots and cook for 5-6 minutes. Add the chardonnay and the salt and pepper and bring to a boil. Allow to simmer for 10 minutes. Add the cream and combine well. Simmer, stirring occasionally, for 10 - 15 minutes, mixture will thicken slightly. Hold warm until service. Adjust seasonings as needed.
